Champagne Frederic Savart
Écueil
Frédéric Savart is the rock star among small-scale grower winemakers – passionate, uncompromising, a true Pinot Noir whisperer. His wines from Écueil and Villers-aux-Noeuds are more sought after than almost any other Champagne of his size.
He cultivates approximately 4 hectares, working with biodynamic inspiration, without a label. The harvest takes place very early to preserve freshness, the base wines age in oak, and malolactic fermentation is partially suppressed. Every cuvée – from “L’Ouverture” to “Le Mont Benoît” – bears his signature: vibrant energy, saline length, razor-sharp focus.
Antonio Galloni calls him a “master of balance and tension,” and Peter Liem writes: “Savart’s wines have an electric soul.”
“I want wine that lives – not wine that pleases.” – Frédéric Savart (Bourgogne Aujourd’hui, 2021)
His bottles are rare, expensive – and almost always sell out faster than you can say “santé.”
