Valérie Gavaud and Bill Moysan run the smallest Domaine des Chablis: Le Vin de Deux comprises just one hectare! Valérie inherited the plots near Fleys from her mother. Her family has been making wine there for over a century. For the first two years, the couple sold their grapes to the cooperative – only since 2014 have they been bottling their own wine. Alice and Olivier de Moor, themselves legendary winemakers in Chablis, provide expert guidance to the Domaine.
From the very beginning, Valérie and Bill have cultivated their vineyard biodynamically. Mont de Milieu is one of the most prestigious Premier Cru vineyards in the region. It lies between Fleys and Chablis, on the right bank of the Serein River – and just east of the legendary Grands Crus. The small plot that Valérie and Bill cultivate here faces southwest, which means it receives plenty of sunshine – a crucial factor in the region's cool climate. The soils couldn't be more typical of the region: limestone and calcareous marl from Kimmeridgia.
The winemakers are committed to preserving the exceptional terroir as pure as possible. Instead of large machines, they use horses in the vineyard. Harvesting is done by hand, and traditional methods are employed in Valérie's great-great-grandmother's original cellar. There is no filtration or fining. Sulfur is used only at the very end and in minute quantities. The wines are bottled very late and remain in used barrels for two winters.
